1 cup Carrots small diced

​1 cup Celery small diced

1 cup Onion small diced

1 clove Garlic minced

​1 tbsp Butter or oil

2 cups Rice

1 jar Spinach Formaggio Sunshine Yellow Tomato Sauce

​1 1/2 cups Vegetable or chicken broth

​8 oz Fresh spinach cut in strips


Saute vegetables in oil then add rice and stir till well coated and blended. Add sauce and broth and stir until completely blended. Cover and bake at 350 degrees for 20 minutes. Pull and fold in Spinach and let open to steam and dry. Stir every 2 or 3 minutes to fluff the rice and keep from getting sticky. After 2 or 3 stirrings, serve.
