1 tbsp Butter or Olive oil

1 cup Celery – Medium diced

1 cup Onions – Medium diced

1/4 cup Hot peppers –  Small diced

2 cups Rice

1 tbsp Cajun seasoning

4 oz Smoked sausage or Andouille (sliced or diced)

4 oz Grilled chicken breast – Medium diced

1 jar CC’s Hot Harlot Sunshine Yellow Tomato Sauce

1 bottle Pilsner beer

1 cup Chicken stock

1 Bay leaf


Saute celery, onion, pepper, chicken and sausage in braising pan until onions are slightly translucent. Add rice and stir until completely coated. Add CC’s Hot Harlot, beer, broth and seasoning then bring to a simmer. Cover and finish in oven for 20 to 30 minutes until liquid is absorbed and rice is tender. Fluff and let rest with lid off for 10 minutes. Serve.
