LOW ACIDITY PIZZA WITH SPINACH FORMAGGIO SAUCE

1 1/4 oz Envelope active dry yeast
1 cup Lukewarm water
3 cups All-purpose flour
¼ tsp Salt
2 tbsp Shortening
1 tbsp Olive oil
1 ½ cups Shredded mozzarella cheese
1 jar Any flavor Sunshine Tomato Sauce
In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes. In a large bowl, combine flour, salt and shortening. Stir in yeast mixture. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth, about 9 minutes. Lightly oil a large bowl, place dough in the bowl and coat with oil. Cover with a damp cloth and let rice in a warm place until doubled in volume, about 45 minutes.
Heat oil in a saucepan over medium heat. Add the jar of Sunshine Tomato Company. Simmer 15 to 20 minutes. Recipe makes 2 (12 inch) pizzas. Divide dough in half and spread onto pizza pans. Cover with sauce, mozzarella cheese and other desired toppings. Bake at 400 degrees for 20 minutes, or until crust is golden brown
